  • 100 gCucumber
  • 1 BunchRadishes
  • 1white onion
  • 400 gMeat sausage, Leberkäse or Regensburger style sausage
  • 1 BunchChives
  • 1 PunnetCress
  • 2 TspMedium Hot Mustard
  • 1 TspKühne Prepared Horseradish
  • 3 TbspKühne White Wine vinegar
  •  Salt
  •  Pepper
  • 4 TbspRapeseed oil

Preparation

1. Cut off the stems on the peppers, cucumber and radishes, remove the seeds and white membrane from the pepper and wash. Cut the pepper into quarters and then into fine strips. Cut the cucumber into quarters lengthwise, and then into slices crosswise. Cut the radishes into thin slices. Peel the onions, cut in quarters and then in thin strips.

2. Remove the sausage casing as desired. Cut the sausage or Leberkäse into thin slices or in strips. Wash the chives, shake dry and cut into rolls. Cut the cress.

3. Mix the mustard and horseradish with vinegar, salt and pepper, stir in the oil. Mix all the ingredients with the sauce and season to taste. Kornspitz bread rolls, pretzel bread rolls or farmhouse bread make the perfect accompaniment.
